LOL It was about 3 or 4 months of her husband coming in every week when I learned that soy sauce was not gluten-free. She loved eel sauce on everything (made from soy sauce). Most restaurants want to help, but it's up to you to get informed. Actually gluten-free, some good, most of them bad. If you don't have celiac disease (1% population) or alergic (6% population) than you shouldn't be gluten-free. Why? Because gluten-free foods contains some of the most heavily processed food in the grocery store! Read the package. Powdered starches and Crap are among the few foods that increase blood sugar higher than even whole wheat. Yes, higher meaning. ...they trigger weight gain('gluten-free belly'), increased blood sugars, insulin resistance and diabetes, nutrient deficiency, cataracts, and arthritis. They are not healthy. So if this is your diet plan, forget it. If however you're the 1% and being gluten-free is saving your life, try whole and unprocessed foods instead. Tips: Eat at home. Avoid excessive tapioca flour. A good option are coconut and vegetable based wraps. Cauliflower can be used to make pizza crust. Vegetables can easily be turned into pasta. Stores sell bean pastas that are very good.Tortilla, make a wrap out of collard greens. The individual leaves can be blanched to take on the texture of a tortilla. Crackers are easy to make out of seeds etc... Especially crackers! I have yet to find a good cracker but they really easy to make.
